Chef Van Pham Thong

Vietnamese born Van Pham Thong has been the Chef of the Floating Market and Atsuko Restaurants since 2014.

Starting his career at just 14 learning Vietnamese cuisine, he has extensive knowledge of Asian fine dining and cooking, having worked as chef de partie in several Vietnamese and Japanese restaurants and world class hotels.

Van spent five years at the 5* Marriott Hotel Doha, broadening his repertoire into Italian and Western cuisines and running two kitchens before moving to the position of head chef at The Crane Resort, Barbados, There he held overall responsibility for delivering a sushi bar and a fusion of Asian food and served several dignitaries including the Secretary General of the United Nations and the Prime Ministers of Barbados and St. Lucia.

He has held positions at the One & Only Royal Mirage in Dubai and the White Sand Resort in the Maldives, and has been in Mauritius since 2012, joining The St. Regis Mauritius Resort from the Heritage Le Telfair Golf & Spa Resort.

Chef Van Pham Thong is hugely passionate about delivering fine dining Asian cuisine and brings a wealth of knowledge, creativity and flair to ensure all guests have a memorable dining experience.
